Not a Sunday roast in sight!
It was my turn to make dinner tonight, and here’s what I cooked up –

Pan-fried teriyaki salmon on a bed of courgetti (spiralized courgette) and spaghetti, which was smothered in an avocado dressing (garlic, avocado, salt, pepper and lemon juice) and sprinkled with roasted eggplant and freshly grated carrot and diced cucumber. Not too shabby!
